Ingredients (Serves 4)
500ml coconut milk (divided)
2 tbsp arrowroot
360ml beetroot juice
50g coconut sugar
2 tbsp vanilla extract
½ tsp salt

¼ tsp Dry Ginger Powder

Method
Whisk 250ml coconut milk with arrowroot until smooth; set aside.
Warm remaining coconut milk in a saucepan. Just before boiling, stir in the arrowroot mixture until thickened, then remove from heat.
Whisk in the beetroot juice, sugar, vanilla, salt, and spices. Chill thoroughly in the fridge.
Churn in an ice-cream maker, or freeze in a lined tin, blending once semi-solid to remove ice crystals.
